Entering the elevator at the Views Baía hotel in Funchal, Madeira, you are whisked up to the rooftop dining spot, Desarma. Newly opened, this elegant restaurant offers a blend of unique flavors and a cozy environment. Created by Atelier Nini Andrade Silva, the restaurant features a spacious layout with a large open kitchen where talented chefs prepare delightful dishes.
Desarma exudes a calm and intimate vibe with well-designed lighting and various table sizes to cater to different groups. The decoration mirrors Madeira’s exotic essence, with large banana palm leaves and wooden sculptures enhancing the setting.
Host Alexandre Nuno Fernandes Franco escorted us to our table where sommelier Sergio Marques welcomed us and guided us through the extensive wine selection. The gastronomic journey at Desarma is a feast for the senses, according to local head chef Octávio Freitas. The tasting menu, paired with wines, offers a unique exploration of Madeira’s history and scenery, incorporating innovative culinary techniques.
Each course presents a delightful mix of flavors and textures, ranging from creamy sweet potato truffles to bay leaf-grilled tuna with roasted garlic. Emphasizing local island ingredients like limpets, black scabbard roe, and red scarlet shrimp, the menu celebrates the region’s produce. For dessert, diners can enjoy reconstructed Madeira cake and a refreshing pineapple and banana blend.
Sommelier Joao Barbosa expertly curated wine pairings that perfectly complemented each dish. Guests have the option to dine outside on the terrace or experience a Chef’s Table meal with seats around the open kitchen, creating a memorable dining experience at Desarma.
